Weekly Menu No. 12

Keeping our grocery budget to a minimum has been an easier task for me lately; though I have to admit that I’ve had a lot of help from my family. With the help of eMeals and $5 Dollar Meals, we’ve managed to make full complete meals that left our bank account happy and kept the kids fed and full. As you know, last week we tried the $150 Costco Meal Plan, don’t forget to check out that adventure. This week, we are using some of the same meals from last week, but we added a couple of new recipes to use This week our total grocery bill was less than $125.00, and that includes restocking the fridge with lots of fruit and vegetables.

What are we having this week for dinner?

Monday: Lemon and Garlic Chicken
Tuesday: Italian Pork Chops
Wednesday: Sloppy Joe Sliders
Thursday: Pork Tenderloin with Mushroom Gravy (eMeals)
Friday: Red Chicken Enchiladas
Saturday: SANTA CLAUS PARADE
Sunday: Pulled Pork

Stay tuned.

Next week, we will be trying out another set of Costco Menus, this will include easy breakfasts and many different dinner options. If you have any menus or meals that you are budget-friendly and you want us to try it out, please send an e-mail to busymomdiary@gmail.com. We are always looking for new meal ideas.

I post my weekly list to encourage menu planning and to give meal ideas, not as a nutritional standard. You should feed your family based on your priorities and values.

What are you having for dinner this week? If you use any of our meal ideas, we’d love to hear your thoughts on them.

  1. That Lemon Garden Chicken sounds FANTASTIC and my mouth is watering already. I am already a picky eater, but even I have to admit that that peeked my interest a bunch. Thank you so much for sharing!

  2. What a smart way for meal planning. This Red Chicken Enchiladas sounds delicious and healthy. Can you share the recipe of this salad!?

  3. Your menu for dinner looks really delicious. I try to make a ‘menu’ for dinner in a week so I don’t have to keep on going to the store to buy the ingredients.

  4. Chicken enchiladas are one of my fave meals! I love that you take the time to plan out meals ahead of time…. I mean to do that but hardly ever do…

  5. The menu items for each day sound delicious! I am always looking for different ideas for pork so I will definitely bookmark this post so I can try some of these.
